You’ll need:• 400g linguine• 1kg fresh clams (vongole), rinsed well• 2 garlic cloves, thinly sliced• A pinch of chili flakes (optional)• A small bunch of fresh parsley, chopped• Olive oil• 100ml dry white wine• Lemon zest + juice How to: Cook linguine al dente in salted water. Reserve a cup of pasta water. In a large pan, sauté garlic in olive oil until fragrant. Add chili flakes. Add clams and pour in the wine. Cover and let steam for 5–7 min until clams open. Discard any that stay closed. Add drained pasta to the pan, toss gently with the clams. Add a splash of pasta water if needed. Finish with parsley, lemon zest and a drizzle of good olive oil.
