Brunch works particularly well outdoors because the food can be prepared in advance and served gradually rather than everything arriving at the table at the same time. It can be as simple as sandwiches, eggs, fruit and something to drink, making it suitable for a garden, park or weekend in the countryside.
Sandwiches are an easy starting point. Smaller versions can be made with egg, cucumber, smoked salmon, cheese, avocado or roasted vegetables and arranged on one large board. Cutting them into halves or quarters makes it easier for everyone to try different fillings.
Eggs can be prepared in several ways without requiring cooking at the table. Boiled eggs travel well, while a frittata or tortilla can be made beforehand, served at room temperature and cut into portions when everyone is ready to eat.
Fresh fruit brings another element to the table without much preparation. Strawberries, cherries, grapes, melon or peaches can simply be washed and served, with the choice changing according to what is in season.
Bread and pastries can make the brunch feel more complete. Croissants, sourdough, brioche or something sweet from a local bakery require no preparation at home and work well alongside both savoury and sweet dishes.
Rather than preparing individual plates, place most of the food in the middle of the table or picnic blanket. A few boards and bowls make it easy to combine sandwiches, eggs, salads, fruit and pastries and allow everyone to eat at their own pace.
Coffee is not the only option for drinks. Fresh juice, homemade lemonade, sparkling water with citrus or iced tea are easy additions, particularly when brunch stretches into the warmer part of the day.
An outdoor brunch can also be a good reason to use what is available nearby. Bread from a bakery, fruit from a market, local cheese and fresh eggs can provide most of what is needed without turning the morning into a long preparation session.
The advantage of brunch is that it does not need a strict menu or starting time. Put together several foods that can be shared, find a comfortable place outside and allow breakfast and lunch to become one long meal.
