A good wrap is one of the easiest lunches to adapt to whatever is already in the fridge. Hummus provides a creamy base while fresh vegetables add crunch, making it possible to prepare a filling lunch in around ten minutes.
Start with a wholewheat wrap and spread a generous layer of hummus across the centre. Add grated carrot, strips of cucumber and a handful of spinach, rocket or mixed salad leaves.
From there, the wrap can be made more substantial. Crumbled feta adds a salty flavour, while a sliced boiled egg provides extra protein. Roasted chickpeas, avocado or leftover grilled vegetables are other useful additions.
Fresh herbs can make a noticeable difference. Parsley, coriander or mint work particularly well with hummus, while a squeeze of lemon brings freshness without needing a separate dressing.
Roll the wrap tightly and cut it in half for lunch at home. If it is being prepared in advance, keep very wet ingredients such as tomatoes away from the wrap itself so the bread stays firm.
This also makes a practical lunch to take to work, the beach or on a day out. Prepare several at once, wrap them individually and keep them chilled until needed.
