A good sandwich is largely about balance. Bread provides the base, but the combination of vegetables, protein, herbs and spreads determines whether it works as a complete lunch rather than simply a quick snack.

Protein gives a sandwich substance. Chicken, eggs, cheese, tuna, beans or hummus can all form the main filling, depending on what else is being added. From there, vegetables introduce freshness and texture. Lettuce and cucumber add crunch, while grilled peppers, courgettes, aubergines or carrots provide a softer and more substantial layer.

Fresh herbs can make a surprisingly large difference. Basil works well with tomato and mozzarella, parsley with chicken or vegetables and mint with cucumber, feta or grilled vegetables. They add flavour without requiring heavy sauces or complicated preparation.

Spreads have more than one function. Pesto, hummus, cream cheese, tapenade and similar ingredients add flavour but can also help keep fillings in place. Very wet ingredients should be used carefully, particularly when sandwiches are prepared several hours before eating. Tomatoes, dressed salads and juicy vegetables can quickly soften bread.

This is especially important for picnics. Sandwiches made with firm bread, relatively dry fillings and ingredients that retain their texture can usually be prepared in advance. More delicate combinations are better assembled shortly before leaving or kept in separate containers until needed.

A well-planned sandwich can combine vegetables, protein and fresh ingredients in one portable meal. For an outdoor lunch, that simplicity is exactly what makes it useful.
